WINE DESCRIPTION
Langhe Nebbiolo follows a very traditional approach to Nebbiolo, which is precisely why we have selected it. The prolonged maceration of the skins, a later harvest (first week of October), and ageing in large, old oak barrels (30hL) result in a sharp, tannic, and austere Nebbiolo. However, this is an incredibly precise wine, superbly crafted, that only requires one thing to reach greatness: time.
As we are aware, the underwater aging process expedites aging, and we have achieved exactly that. The underwater aging process began to refine the wine - the tannins have become somewhat smoother, the acidity has softened, yet the structure remains intact. It still has a considerable journey ahead, but with half an hour of decanting, it will truly shine. The aging process slightly deepens the fruit profile; the raspberries diminish, giving way to dominant dark cherries. Violets and tar persist throughout, while black tea begins to emerge shortly after submersion. The eucalyptus aroma from oak aging transforms into star anise. The precision of the aromas remains consistent throughout ageing, with all components working harmoniously to deliver a long-lasting finish.
