WINE DESCRIPTION
Lay GG is a Mosel Riesling fermented to dryness, designed for decades of aging. As you might expect, given that it is released to the market just two years after harvest, it is far too young to be consumed. The acidity is razor-sharp, it is super shy on the nose, and the aromatics take up to an hour to begin emerging from the glass. This does not mean that this is a bad wine, it simply means that it needs time, at least a couple of years. This is often the case with wines intended for ageing.
Underwater aging expedites the aging process, and the 9 months spent submerged are roughly equivalent to three years of conventional aging. This was a highly complex wine from the outset, and it becomes evident after underwater aging. The mineral, racy texture is preserved through aging, although the acidity mellows out a bit after the submersion process. Aromas of unripe pears, lime, and yellow peaches transform into mango, yellow pears, and grapefruit aromas with aging. White flowers initially present evolve into jasmines, stone fruit into marmalade, and the wine maintains saline undertones in its olfactory profile throughout the ageing process.
